Speedy Spinach Spam Quiche
A quick adventure with the recipe for a delicious Speedy Spam Spinach Quiche. Sarah goes undercover with the world’s most famous secret agent to find out the truth: Real men DO eat quiche. Especially with Spam and Monty Python’s Viking song. Denton Rose may not agree, but he still wants more. The Speedy Spinach Spam Quiche is a favorite and Sarah bakes it often!
It is quick, easy, and good enough to bake over and over again!
This time it was made with gluten free biscuit mix. It can also be made with regular. Either way it is a great meal!

James Bond cooked the quiche in A View to a Kill. While not regarded as one of the best, it was fun. Who can resist Christopher Walken as a villain? And when else has a blimp snuck up on people from behind?

Recipe for Speedy Spinach Spam Quiche
12 oz can lite Spam cubed (You can use Spam with Bacon – juicier and VERY flavorful!)
1/4 cup chopped pepper
1/4 cup chopped onion
1 cup shredded Monterey jack cheese
10 oz frozen chopped spinach – thawed and well drained
1 cup biscuit mix (Optional – use gluten free biscuit mix)
1/8 tsp pepper
1 tbsp cooking oil
2 cups milk
Preheat oven to 400 degrees
Sauté Spam, onion, and green pepper in oil.
Spoon into lightly greased 8×8 two qt casserole dish.
Sprinkle with cheese.
Evenly sprinkle chopped spinach over cheese.
Mix remaining ingredients with mixer until smooth.
Pour evenly over casserole mixture.
Bake for about 40 minutes.
Let stand 5 minutes before cutting.
